INGREDIENTS
250g butter or margarine
1 ½ cups castor sugar
6-7 eggs
3 cups flour
3 teaspoon baking powder
2tsps full orange juice
½ cup milk
1 roll puff pastry(any kind).
Jam of choice, but I prefer apricot
Muffin Pan
METHOD
Beat butter and castor sugar till creamy, adding
eggs and beating well. Add juice.
Add sifted flour and baking powder, adding milk
and beat well.
Roll out pastry into circles to fit bottom and
sides of muffin pan (app +-22)
Place a teaspoon of jam in the centre of pastry. Fill
each pastry cases with cake mixture.
Cut a stip of pastry and place over cake mixture.
Bake at 180 degrees until golden.
