INGREDIENTS
bread:
3 cups (3×250 ml) cake flour
5 ml salt
5 ml sugar
60 g butter
10 g anchor instant yeast
1 large egg beaten
125 ml lukewarm water
30 ml milk
filling:
1 bunch spinach coarsely chopped and steamed or
blanched in boiling water.
1 cup grated mozzarella cheese OR
1 cup crumbled feta cheese OR
half cup grated mozzarella cheese and half cup
crumbled feta cheese
1 and half cup cubed cooked fillet in masala of your
choice(optional)
punnet of mushrooms sliced and stir fried in butter,
salt, garlic and pepper
garlic salt, lemon pepper, seasoning to taste

METHOD
mix all dry ingredients and rub butter in with
fingertips. add yeast and mix
add beaten egg, water and milk to form soft dough.
knead well until smooth and elastic, about 5 minutes.
place dough on lightly floured surface, cover with
greased plastic and leave to rest for 5 minutes.
knock down, and divide dough in half. roll each half
into an oval shape 5 mm thick. roll one oval slightly
larger than other
place smaller oval on greased baking sheet and
spread evenly with filling. season to taste
cover filling with larger oval and tuck edges of top
layer under the edge of smaller oval
brush with oil and make 2to3 slits with knife on top
cover with greased plastic and allow to rise in warm
place place until double in volume about 15to20
minutes.
dust with flour and bake in a pre heated oven at
200ºc for 25to30 minutes or until golden brown
