(Serves 4)
2 teaspoon canola oil or cooking spray
300 g skinless chicken breast fillet,
cubed
2 teaspoon canola oil, extra
1 clove garlic, crushed
1.5 cups long grain white rice
3 cups water
1 packet MAGGI Onion Soup Mix
1 red capsicum, diced
1 cup frozen green peas
1 tablespoon soy sauce
2 spring onions, sliced
How to make
1. Heat oil in a large frying pan. Add
the chicken. Stir-fry over a high heat
until golden brown. Remove from the
pan and set aside.
2. Add extra oil to the pan, then the
garlic and rice. Cook, stirring, for 2
minutes.
3. Stir in the MAGGI Onion Soup Mix,
add the water and bring to the boil,
stirring. Cover, simmer for 10
minutes.
4. Stir in the chicken, capsicum and
peas. Cover and cook for a further 5-8
minutes or until the rice is cooked
and the liquid is absorbed. Stir
occasionally.
5. Stir in the soy sauce and spring
onions, just before serving. Garnish
with fresh herbs and sliced egg
omelette if desired.
