INGREDIENTS
40 g plain flour
1 teaspoon baking powder
25 g cocoa powder
140 g plain chocolate, broken into small pieces
3 medium eggs
225 g castor sugar
1 teaspoon vanilla essence
80 g mayonnaise
30 g Stork Bake (can use butter)
55 g walnuts, toasted and chopped
2 tablespoon red food colouring gel
METHOD
Grease tray, set oven at 160º C.
Sift flour with baking powder and cocoa.
Melt chocolate with the Stork Bake.
In a large bowl, whisk eggs with sugar and vanilla until slightly thickened.
Whisk in chocolate mixture and red food colouring.
Fold in flour mixture, mayonnaise, and chopped walnuts.
Pour into the prepared tin and bake for about 30 - 35 minutes.
Leave to cool before cutting squares.
If you double the recipe, it is the right amount for the grill pan that comes
with an oven.
