INGREDIENTS
250g butter
1 cup sugar
1 ½ cups water
1 teaspoon bicarbonate of soda
1 teaspoon allspice
500g packet of mixed fruit
2 cups cake flour
2 teaspoons baking powder
2 eggs
METHOD
1. Boil together butter, sugar, water, bicarbonate of soda, allspice and mixed fruit gently for 15-20 minutes. Allow to cool.
2. Add the flour, baking powder and eggs to the fruit mixture and mix together gently to make a soft batter.
3. Line a square pan or loaf tin with paper. Bake at 160 degrees for 45 minutes to an hour or until done. Remove form oven, cool for 10 minutes and spread with warm apricot jam and decorate with cherries and pecan nuts and almonds.
