Madeira Cake (Blue Ribbon Recipe) 125g Margarine (1⁄2 cup). 250ml Castor Sugar (1 Cup). 2 Eggs
Grated rind of 1 Lemon. 5ml Vanilla Essence (1 Teaspoon). 500ml Cake Flour (2 Cups). 10ml Baking Powder (2 teaspoon). 250ml Milk (1 Cup).
Method: ~Cream Margarine and Sugar until light and fluffy ~Beat in the eggs,Lemon Rind and Vanilla essence ~Sift flour and Baking powder together and mix into the creamed mixture alternately with the milk ~Pour into a greased 23cm (9inch) loaf tin and bake at 180 degrees (350 F) for ± 1hour *. Variation: Cherry Cake Add 250ml (1Cup) cherries, chopped to the cake mixture and fold in. ** Personal Note : this is a flop proof recipe and turns out perfect every time. I leave out the Lemon Rinds and substitute with 1⁄2 cap of Lemon Essence. Divine
