1 cup flour 1 egg yolk 1 tablespoon lemon juice 60g butter Pinch of salt Iced water to form dough
METHOD: 1.combine all ingredients together and use enough water to form a soft dough leave in the fridge for 1 hour. 2. Roll dough out to fit a quiche pan (I used cup cake pans).
FILLING: 1 cup cubed chicken breast. 2 teaspoon green crushed green chillies. 2 teaspoon garlic. 1 teaspoon salt. 2 teaspoon pepper. 2 teaspoon lemon pepper. 1 heaped tablespoon chicken spice or more. Pinch arad (Turmeric). little squeezed lemon. 1 chopped tomato. little Chopped dhania (coriander).
METHOD: 1.cook chicken with the above ingredients until done.(besides the dhania (coriander) add in when chicken is done). 2.place chicken over the dough.
TOPPING: 125 ml fresh cream. 2 egg whites - beaten. 1⁄2 teaspoon salt. 1⁄2 teaspoon pepper. Grated cheese.
METHOD: 1.mix cream,egg whites,salt and pepper together and pour over filling. 2. Sprinkle grated cheese and garnish with tomato and slices of peppers. 3.bake at 180 degrees until quiche is puffed and golden in colour.
