INGREDIENTS
70g butter.
½ cup selfraising flour
¼ cup caster sugar.
1 egg.
1 egg yolk.
1 teaspoon vanilla essence.
Decoration.
1/s cup fresh cream.
6 tablespoon strawberry jam.
½ cup icing sugar.
1 tablespoon lemon juice.
METHOD
Preheat oven to 180'c place a 12 section silicone mini muffin tray on baking tray. Put butter, caster sugar,flour,egg,egg yolk and vanilla in a mixing bowl and beat together with an electric beater till smooth and creamy.
Using a teaspoon spoon mixture into cases and level with back of a spoon. Bake for 15 minutes.
Decorations.
Whip cream until just peaks. Split cake in half spread jam over then cream place the other half on top. Beat icing sugar and lemon juice together until smooth spoon icing over the cakes. Pipe dots of jam on top and draw with a wooden skewer through them
