INGREDIENTS
500g uncooked prawns.
¾ cup plain flour.
1 egg lightly beaten.
¾ cup buttermilk.
40g melted butter.
1 tablespoon oregano or thyme.
1 cup sour cream.
Fresh coriander leaves.
CARAMELISED ONION.
50g butter.
1 large red onion finely chopped.
2 tablespoon brown sugar.
1 tablespoon balsamic vinegar.
¼ teaspoon ground black pepper.
¼ cup water
METHOD
Shell and devein prawns. Finely chop.
Sift flour into bowl. Whisk in combined egg, buttermilk and butter until smooth. Stir in prawns and oregano/thyme. Drop rounder teaspoon of mixture in batches into greased heavy-based pan cook until bubbles appear turn pancakes cook until browned on other side. Repeat with remaining mixture. Spoon sour cream onto pancakes top with caramelised onion then coriander. CARAMELISED. ONION.
Melt butter in pan add onion cook covered over low heat for 5 minutes. Add sugar,vinegar,pepper and water stir over low heat about 15 minutes or until onion is very soft and mixture is thick and syrupy. Cool
