INGREDIENTS
250g butter or margarine
4 cups cake flour
4 tablespoon castor sugar
4 tablespoon sunflower oil
4 teaspoon baking powder
2 eggs
¼ teaspoon fine salt
½ teaspoon vanilla essence
1 tin stawberry jam
METHOD
Cream the butter and sugar well together. Add vanilla essence and combine again.
Stir in beaten eggs, add sifted flour,baking powder and salt.
Mix well to form a dough.
Divide dough into two parts. Place one half in a greased rectangular glass dish as the bottom layer.
Heat jam in the microwave for a minute, pour over the dough in an even layer.
Grate remaining half of dough over the jam.
Bake at 180 degrees celcius for 25 minutes.
INFO & TIPS
You may substitute apricot jam for strawberry jam if preferred.
