INGREDIENTS
1 packet tennis biscuits crushed finely, 2 eggs, 5 tablespoon butter, 1 tub plain smooth cottage cheese, vanilla essence, 1 cup castor sugar, 2 tubs sour cream, icing sugar, corn flour, red coloring, 1 punnet strawberries
METHOD
preheat oven to 180 degrees. 1st layer: take the crushed tennis biscuits and mix it with the 5 tblspns of butter and layer in cheesecake pan then place it in the oven for 5 minutes. after 5 minutes remove from oven and allow to cool.
2nd layer: beat 2 eggs then add cottage cheese, 1 teaspoon vanilla essence, ½ cup castor sugar. beat well and then pour over the 1st layer and place into the oven for 10 minutes. remove from oven and allow to cool.
3rd layer: beat: sour cream, ½ cup castor sugar and 1 teaspoon vanilla essence.place over the 2nd layer and place into the oven for 15 minutes. remove and allow to cool. in a sauce pan add water and icing sugar with 1 tablespoon corn flour, red food coloring. boil to make a syrup make sure it s not too thick and not too thin. pour over the 3rd layer and allow to set in the fridge over night. when you ready to serve the cheesecake cut strawberries in half and decorate.
