Base : 1 ½ packet tennis biscuit 100g melted butter Process biscuit fine, add butter mix to resemble wet sand Press biscuit in a lined spring foam pan or mini cheesecake pan Set in the fridge
In the meantime prepare your Cheesecake :
In a bowl dissolve 2 ½ tablespoon gelatine with ½ cup hot water (set aside) Beat 250ml fresh cream stiff (set aside) Mix together : 1 tin condensed milk 250g cottage cheese ½ cup lemon juice (for this flavor I used half the amount) Stir above mixture to beaten cream until smooth. At this point I added few drops ± 4 drops of rose essence and ¼ cup or less rose syrup. (I added the rose syrup just to give color) Lastly add the gelatine and gently mix mix to blend. Pour over biscuit base. Set in the fridge When set decorate with fresh cream and turkish delight.
