2 x 410g tins of whole kernel corn, drained and minced. 3 large eggs salt and freshly ground black pepper to taste 2 teaspoon white sugar pinch of ground nutmeg 1⁄2 cup of plain yogurt 1⁄2 cup of milk 200g grated cheddar cheese plus extra for serving 1⁄2 cup of cake flour 2 teaspoon baking powder
Preheat oven to 180 degrees. Combine all the ingredients in a bowl and mix well. Line a loaf tin with baking paper and pour in the batter. Bake until golden and cooked through for approximately 1 hour. Serve warm, topped with extra cheese.
