INGREDIENTS
2 x 410g tins of whole kernel corn, drained and minced.
3 large eggs
salt and freshly ground black pepper to taste
2 teaspoon white sugar
pinch of ground nutmeg
½ cup of plain yogurt
½ cup of milk
200g grated cheddar cheese plus extra for serving
½ cup of cake flour
2 teaspoon baking powder
METHOD
Preheat oven to 180 degrees. Combine all the ingredients in a bowl and mix well. Line a loaf tin with baking paper and pour in the batter. Bake until golden and cooked through for approximately 1 hour. Serve warm, topped with extra cheese.
