INGREDIENTS
FOR THE BASE:
1 x Roll Puff Pastry (Used the 'Today' one)
FOR THE FILLING:
1 large onion (finely chopped)
500g mushroom (finely chopped)
½ green pepper (finely chopped)
2 x finely sliced chillies
salt to taste
ground black pepper
1 tablespoon margarine
1 cup grated cheese
250ml fresh cream
2 tablespoons flour
500ml milk
METHOD
In a frying pan, saute the sliced mushrooms, onions, pepper & chillies with some butter, black pepper and salt. In a pot, heat the fresh cream and one tablespoon of butter until it comes to a boil. Mix the flour and milk together. Beat until flour dissolves. Add the mixture of flour and milk to the fresh cream in the pot. Continue stirring until it thickens. Remove from heat. Add sauted mushrooms, onions, green chillies and green pepper to the sauce. Allow sauce to cool. As the mixture cools, it will thicken. Roll out the puff pastry using flour to dust and cut into circles. (I used a muffin tray to put the circles in. Spoon mixture into the centre of each mini pastry. Add grated cheese onto each quiche. Bake in the oven at 180 degrees for about 20 minutes or until pastry is cooked. Remove & tuck into immediately. Awesome !!!
