INGREDIENTS
2 cups cake flour4 teaspoon baking powderPinch of salt2 tablespoon castor sugar125g butter cubed1 xl egg 125ml buttermilk3 tablespoon water
1 egg whiskedHandle dough as little as possible for scones to remain light
METHOD
•sift flour, baking powder and salt together •add castor sugar •rub butter into flour mix until it resembles bread crumbs •whisk egg, water and buttermilk tog.•add to flour mix and make a soft dough•Turn dough onto a floured surface and pat to thickness of 2 cm•cut into rounds using a fluted cutter and brush with eggBake in preheated oven @ 200 degrees for about 15 minutes or until golden.
For savoury scones omit castor sugar and for
herb scones and 3 tablespoon fresh chopped herbs.
