150 g butter
280 ml sugar
2 cups of flour
3 teaspoon baking powder
1 teaspoon vanilla essence
100 ml milk
50 ml water
1 tablespoon oil
1. Add ingredients in order to a bowl.
2. Beat well for 3-5 minutues till a smooth batter consistency is achieved.
3. Place in 2 greased loaf pans or makes 24 cup cakes.
4. Bake in a preheated oven at 180°c.
Drizzle with icing sugar mixed in Little water (thick and not to runny) and sprinkle with coloured blanched and slivered almonds.
Grate in the rind of 1 Lemon or orange and add into bowl before beating. Add in chopped pecan nuts to batter.
Make icing with icing sugar and a little lemon/orange juice and sprinkle with chopped pecans.
