INGREDIENTS
125g Butter
1 packet tennis biscuits
2 and a half cups Cremora
Half cup fresh lemon juice
1can condensed milk
1can dessert cream
METHOD
Place the biscuits in a food processor and process until fine. Add the butter and mix until combined. Spoon into prepared cheesecake tin and press firmly onto base. Refrigerate for 20 minutes or until firm
Combine the Cremora, lemon juice, condensed milk and cream together in a processor and process until well combined or alternatively mix thoroughly using a metal spoon or whisk.
Pour over the biscuit base and chill well for 4-6 hours or preferably overnight.
Decorate with whipped cream and seasonal fruit..
INFO & TIPS
I prefer to add the lemon juice last... as this is what causes it to set.
