INGREDIENTS
½ onion, finely chopped
1 small tomato, grated
1 cup frozen mixed veggies or 1 can mixed veg (I use frozen)
Salt and black pepper to taste
Green masala
Garlic flakes
Dried mixed herbs
Red chilli powder
1 sachet tomato paste
1 packet Knorr Minestrone Soup
½ cup boiled pasta (any pasta)
Shavings of parmesan cheese
METHOD
Make onion vagaar in ghee (Clarified butter) and a bit of olive oil. Add tomato, veggies and spices and cook. When almost cooked, add tomato paste. Mix soup according to packet instructions and then add to veggies. Bring to the boil and simmer until slightly thickened, stirring continuously. Add boiled pasta and sprinkle parmesan cheese just before serving. Serve with toast bread or croutons.
