RECIPE
PERI PERI MASALA:
1 kg red chillies
½ kg garlic
1 ½ cups lemon juice
1 ½ cups fine jeeru (cumin)
¾ cup salt
½ cup oil
½ cup vinegar
Make masala, then use to marinate chicken.
CHICKEN:
1-2 tablespoon peri peri masala
Salt
1 teaspoon dhana jeeru (cumin)
½ teaspoon whole jeeru (cumin)
1 tablespoon lemon juice
½ teaspoon egg yellow food colour
1 small tin tomato puree
1 tablespoon tomato sauce
½ teaspoon crushed garlic
Aromat (a South African Spice)
Oil
ghee (Clarified butter)
Garlic butter
Marinate chicken with above ingredients and cook.
