INGREDIENTS
1 kg of beef steak cubes3 tablespoons of oil2 large onions peeled and chopped3 cardamom pods3 whole cloves2 cinnamon sticks 2 tomatoes, chopped2 teaspoons of salt3 tablespoons of freshly grated or chopped garlic and Ginger2 teaspoons of turmeric 2 -3 tablespoons of roasted masala 1 teaspoon of jeera 1 teaspoon of paprika A dash of vinegar and sugar .2 potatoes peeled and cubed , small cubes .
METHOD
Add the oil, onions, cardamom pods, cloves and cinnamon in a large saucepan. Fry for about 10 minutes on a medium heat or until the onions are golden brown.
Add the beef and tomatoes and cook for 15 minutes on medium to low heat , stirring when needed . Add half a cup of hot water and cook slowly , for 10 minutes , add water again and allow to simmer .. When meat is almost tender add all your spices and salt and stir fry for a few minutes adding a SKOORTJIE of water / a dash of water to prevent spices from sticking to pot or burning ... After that add a cup of hot water, the small cubed potatoes and cook on medium to low heat for 30 minutes . Serve with rice and hot veggies .
Tip - check for tenderness of your meat before adding potatoes , a slow cook ensures a tender meat . You may add some chopped coriander at the end before serving .
