INGREDIENTS
4 large potatoes par boiled in peel.
Butter
1 thinly sliced onion
Salt, fine red chillies and pepper
Mixed herbs
500ml fresh cream
Grated cheese: mozzarella, gouda, Cheddar or a combination of them
Optional:
Cubed cooked chicken fillets
Sweet Corn kernels
Thinly sliced green pepper rings
METHOD
Grease an ovenproof dish with butter. Pour in enough cream to cover bottom of dish.
Peel potatoes and thinly slice with sharp knife.
Layer potato slices then onion then corn/fillets/green pepper if preferred.
Intersperse layers with cheese, cream, salt, pepper and red chillies.
Pour remaining cream over and bake at @ 180°c for an hour or till potatoes are cooked through.
Sprinkle with more cheese and some mixed herbs. Grill until melted and slightly browned.
Serve immediately or leave standing in warmer drawer till ready to serve as this dish improves with standing.
