Boil your medium sized gemsquash without cutting...
Cube one carrot a couple of green beans one small potato and chunks of butternut...
Let this partially cook in one tablespoon of olive oil. Or u cud boil separatly...
(I added 1tbs thick veg soup to make it thick & brings a different flavour)
Once your gemsquash is boiled cut it in half and deseed it.. after remove seeed mix it together with other vegetables using herbs such as parsley /origanum to make a paste.
U could add shredded chicken,cheese,red peppers and sweetcorn etc to make veg stuffing :)
Then u use your gemsquash skin as the parcel to stuff your veggies In, sprinkle cheese and bake on low heat for 15 minutes...
It turns out good :)
Virtually fat-free but delicious :)
Sprinkle with spring onions and crushed black pepper.
INFO & TIPS
To make it tastier I add in 2tbs of creamy veg soup (diluted in water) to the veggies while cooking :)
