RECIPE
bhurkoo (crushed wheat)
2 cups oil dhall (lentils)
2 teaspoon coarse salt
2 cups crushed wheat
Boil till soft and mushy,stir continuously to avoid scorching
¼ cup mealie meal,mix in little cold water
Add to pot and mix well,leave to boil on low till consistency is of porridge
1 medium onion (sliced)
¼ cup ghee (Clarified butter)
Fry onion and pour over burkhoo just before serving
KHURI
2 cups sourmilk
2 tablespoon gram flour
1 teaspoon crushed green chillies
1 teaspoon khuri masala
1 tablespoon lemon juice
Salt
Pinch of tumeric
Pepper
Chopped dhania (coriander)
Liquidize together
In a pot braise in ghee (Clarified butter)
1 teaspoon mustard seeds
1 teaspoon Methi (Fenugreek) seeds
1 teaspoon Jeeru (Cumin)
½ chopped onion
A sprig of curry leaves
Once braised add in liquidized mixture and boil till thickens
