INGREDIENTS
1 cup sugar,
1 cup oil.
Beat well. Add 3 eggs, 1 at a tym and
¾ teaspoon vanilla and beat till fluffy.
Sift dry ingredients :
1 and ½ cup flour,
1 and ¼ teaspoon baking powder,
1 teaspoon fine cinnamon,
1 teaspoon bicarb,
¼ teaspoon salt.
Add 2 above and beat.
Mix in 1 cup chopped pecans and 2 cups grated carrots.
Bake at 180 til done.
METHOD
Topping
60g butter,
1 teaspoon vannilla essence,
2 cups sifted icing sugar,
½ tub cottage cheese..
