INGREDIENTS
(Recipe credit : Foshini Mag 2009)
1 cup sugar
1 egg
1 tablespoon apricot jam
1 cup flour
1 cup milk
1 teaspoon vanilla
1 teaspoon bicarb of Soda
1 teaspoon baking Powder
1 teaspoon vinegar
SYRUP - Boil Together
100g butter
1⁄2 cup sugar
1 cup milk
1⁄2 cup water
1.5 teaspoon Vanilla Essence
METHOD
Beat eggs,sugar and jam till creamy and pale in Colour.
Add the rest of ingredients and mix till a smooth.
Pour in a greased baking Dish or Square Oven tray and Bake on 180 Degrees.
for about 25-30 minutes
Boil all the syrup ingredients while pudding is baking..once pudding is baked poke with fork as soon as it cums out of the oven and pour all the syrup over...
Serve with ice cream,custard or cream
