4 poached eggs 2 English muffins (or panini bread)
Hollandaise Sauce : 3 egg yolks ½ cup melted butter 1 teaspoon vinegar / lemon juice Salt and pepperSprinkle of chilli powder Ground green chillies - blend egg yolks, vinegar, salt and pepper and chilli powder on medium speed - pour in hot melted butter little at a time allowing the butter to be incorporated into the sauce-once you have added all the butter blend on high speed for a minute and add in chillies Sauce should be thick and creamy
Place pouched egg on the muffin and pour hollandaise over Enjoy

Generally the poached eggs are served on an English muffin with a grilled piece of chicken/polony and then topped with the eggs and covered in hollandaise.
