INGREDIENTS
4 meduim sized potatoes boiled till soft
2 beaten eggs
½ stick polony diced into small pieces OR ½ kg cooked samoosa mince mixed with chopped greens
Flour
METHOD
Mash the potatoes with salt & pepper to taste. If using mince add a little green masala to mash.
Season polony, if using, with fine red chillies, salt & vinegar.
Oil your hands and form ball with mash potato. Flatten on Palm of hand. Lightly brush with beaten egg. Place filling in and bring sides of mash over to cover. Form into a cutlet shape making sure the filling is evenly covered in the mash potato.
Coat in flour then beaten egg and shallow fry till golden.
