Fast & Easy Potato Boats

2 large potatoes
1 tray Mc'Cains creamed spinach
1 punnet button mushrooms
Dash fresh cream
Dried mixed herbs
Salt and pepper to taste.
Microwave spinach as instructed. Season with salt and pepper
Wash potatoes and poke all over with a knife.cover with kitchen paper and place in microwave covering with a lid
Cook for few minutes until a knife inserted goes all the way through.
Whilst its cooking, place a dash of butter, dash herbs, salt, pepper, lemon juice and pinch cayenne in pan. Add mushrooms and saute.
Add cream and allow to thicken.
Cut open potato, spoon on creamed spinach, mushrooms and sprinkle cheese. Serve hot
