INGREDIENTS
1 onion finely sliced½ green pepper cubed ½ red pepper cubed 2 green chillies slice2 tomatoes Chopped finelyHandful of spring onions
½ teaspoon minced garlic ½ teaspoon paprikaSalt & pepper to taste½ teaspoon cuminPinch of sugar ¼ teaspoon tumeric

METHOD
Braise the veg in ghee (Clarified butter) till soft. Add spices and cooked for a few minutes.Then make wells in the sauce and lightly crack eggs into the wells. Cover and allow to cook to your liking weather runny or we'll done.Garnish with coriander & parsley.Serve with buttered toast or sourdough bread.Enjoy!
