INGREDIENTS
Shakshouka
We grew up eating this dish, but we called it:Beda (Eggs) Chutney(serves 2)

Ingredients:2 large tomatoes (liquidized),1 tablespoon tomato sauce/or puree/or paste,1 small onion (finely sliced),1 stick taj (cinnamon),½ teaspoon chilli powder,½ teaspoon paprika,¼ teaspoon turmeric powder,1 teaspoon ground garlic paste,½ teaspoon salt,1 teaspoon dhana jeeroo (coriander cumin) powder,Fresh ground black pepper,Chopped parsley,5-7 med- large eggs (room temp.)
METHOD
1. In a pan, braise onion until golden with oil and taj.2. Add the spices & garlic and braise until fragrant.3. Add the tomatoes & sauce, and reduce till thickened into a ‘chutney’ texture. It will be ready when little holes form.4. Remove taj, and make small little holes/pockets in the chutney.5. Crack the eggs, one by one, and gently pour without breaking the yolk, into the pockets.6. Cover the pan with a lid and allow to steam until cooked. Cook as you desire, I.e. with hard or runny yolk.7. Garnish with parsley and pepper.8. Serve immediately with pita/ challah/ white bread/ roti. #mamataughtmewellrecipes
