Red Velvet Cake With Cream Cheese Frosting

Ingredients:2 ½ cups flour1 ½ cups castor sugar1 teaspoon bicarb. of soda1 ½ tablespoon cocoa powder1 teaspoon salt1 cup buttermilk2 XL eggs1 ½ cups oil1 tablespoon vinegar½ - 1 bottle Moir's crimson pink coloring or Robertson's red coloring1 tablespoon vanilla essence
Topping:250g butter3 cups icing sugar 2 tablespoon milk1 tub lancewood cream cheese1 teaspoon vanilla essenceCake crumbs

METHOD

1. Preheat oven to 180 °Cup. 2. Mix flour, sugar, cocoa and salt.3. In another bowl combine buttermilk, egg, oil, and coloring. mix well.4. Add into flour, mix well. 5. Combine vinegar and bicarb and pour over batter, briskly whisk in. 6. Spoon batter into greased and lined round trays. 7. Bake for 35-45min, until skewered and cooked through in center. Allow to cool, then remove from pans and cool further.8. Beat cream cheese until smooth. 9. Beat butter and sugar until fluffy, add all ingredients and form frosting. 10. Sandwich the 2 Layers of cake with frosting and frost the top decorate with cake crumbs.
