INGREDIENTS
6 Trotters
1 ½ cups of sugar beans
1 onion finely chopped
3 cinnamon sticks
1 heaped teaspoon ginger and garlic paste
1 serving spoon of masala
2 grated tomatoes
A sprig of curry leaves
A sprig of fresh thyme
METHOD
Boil the trotters and add sugar beans once trotters are half boiled.
Heat oil
Add onion and cinnamon sticks
Add ginger&garlic paste once onion is golden
Add masala
Add tomatoes and curry leaves
Add trotters and beans with the water in which in it was boiled.
Add thyme and salt to taste
Allow to simmer on low heat until thickened
INFO & TIPS
Soak the sugar beans in water for a few hours/overnight to improve cooking time.
