This is a another variation of a one-pan egg dish. A classic Turkish breakfast dish which is traditionally just tomato, green pepper, spices & eggs scrambled lightly into a slow cooked sauce.. I strayed from the traditional recipe as usual.. & put my own spin to it🤗
1 onion sliced 2-3 plum tomatoes roughly chopped ½ green & ½ red bell peppers sliced thinly 1 green chillie sliced (optional)
Braise above in ghee (Clarified butter)/oil till softened. Add crushed sea salt, fresh ground black pepper, chillie flakes. A good sprinkle of sumac & oregano Simmer for a few minutes Crack eggs into a bowl, whisk lightly & season well Make a well in the centre of sauce & pour eggs. Scramble eggs & mix sauce through well. Crumble some fresh feta over the eggs & garnish with spring onions & chopped coriander. Enjoy!
