Royal Cream Biscuits.
½ pound butter (250g). ½ cup castor sugar. 2 eggs.
1 cup ground almonds.
½ cup maziena/corn flour.
1 teaspoon almond essence.
Flour as required to make a soft dough.
DECORATIONS- Castor sugar.
Almond butter icing.
Cream butter and castor sugar.
Add egg and the rest of the ingredients to make a soft dough.
Roll out on a floured board.
Cut into oval or Rectangular shapes and press 2 lines into each biscuit ( I just use a flat nozzle, no rolling).
Bake until light brown.
Cool and sandwich with almond butter icing and Dip in castor sugar.
Almond Butter Icing. ¼ pound (125g) butter, softened. Approx. 2 cups icing sugar.
2 tablespoon ground almonds.
½ teaspoon almond essence.
Beat ingredients very well together
