RECIPE
Spanish Rice
Adapted from cosmopolitan cuisine
2 cups basmati rice
2 teaspoon salt
½ teaspoon tumeric
½ teaspoon Robertsons rice spice
Boil until half done & strain in colander
In a pot melt a small block of garlic butter, stirfry sliced onion, coloured peppers, ½ cup frozen corn, ½ cup frozen peas, julienned carrots, sliced mushrooms
Season with salt, lemon pepper & Aromat (a South African Spice)
Add the boiled rice & steam with a cup of fresh squeezed orange juice

2 tablespoon sliced almonds
1 teaspoon whole saumph
1 green chillie sliced
A few curry leaves
2 tablespoon ghee (Clarified butter)
Braise then pour over rice & steam for approx 20 minutes on oven
Thai green chicken curry
2 pieces of chicken fillet sliced
Some green veg of your choice (baby spinach, green beans, broccoli)
Speared corn
Make a green curry paste with
2 stalks lemon grass
A few spring onions
1 green chillie
Salt
A few basil leaves
lemon juice
2 cloves of garlic
1 piece of ginger
Blend to form a paste
Braise sliced onion in butter, add the curry paste & cook for a bit, then add chicken & veg cook till done. Pour in ½ can coconut milk or more if u prefer! Garnish with spring onions, coriander & squeeze of lime juice. Enjoy!
