INGREDIENTS
Cookies

125g Butter
½ cup white sugar
½ cup brown sugar
½ teaspoon vanilla essence
1 egg lightly beaten
1 and ¾ cups self raising flour (I prefer to substitute with all purpose flour and baking powder)
pinch of salt
Marshmallows (cut in half)
Slab of chocolate (your choice I used top deck and some dark chocolate)
METHOD
Pre heat oven to 180
Cream butter, sugar and vanilla essence
Fold in egg and sifted flours and salt
Shape dough into mini thick discs, place on baking sheet
Bake for about 9 minutes.
Remove from oven and place halved marshmallow on hot cookies and top with chocolate 🍫
INFO & TIPS
I prefer the cookie to look neat and therefore I wait a few minutes before placing the marshmallow and chocolate onto it as it melts really quickly. (If I'm in a hurry I just pop them into the fridge to cool with the marshmallow and chocolate piece in place)
If you're not iffy about the look of the cookies the fam did prefer the messy melted version and claimed it was tastier 😬
