Rich & Moist Fruit Cake

INGREDIENTS
¼ cup dried cranberries
¼ cup candied ginger
¼ cup dried pineapple
½ cup golden sultanas & raisins mixed
½ cup chopped dates
¼ cup chopped glazed red/green cherries
½ cup chopped pecans
½ cup golden syrup or honey
1 teaspoon bicarb
1 cup fruit juice
200 g butter
Mix all above in a large saucepan, bring to boil then simmer on low for a few minutes & cool
Then sift:
2 ⅓ cups flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon mixed spice
Whisk 4 large eggs
METHOD
Whisk 4 large eggs
Mix all the above well, pour into greased loaf tins & decorate with cherries. Bake & 180deg for approx 45 minutes
Drizzle with Glace icing
