Crème Brûlèe

4 egg yolks
¼ cup + 1 tablespoon sugar
1 vanilla bean or 1 tablespoon vanilla extract
2 cups heavy cream
Granulated sugar for sprinkling
Beat the egg yolks for a few minutes then add in the sugar gradually & beat further till light & fluffy.
Heat cream & vanilla bean with seeds removed till it comes to a light simmer. Set aside and cool a bit. Seive the cream to remove vanilla seeds
Add cream gradually to the egg mixture while beating to temper. Mix well then sieve mixture again. Pour into ramekins then place into a water bath & bake @ 160 deg for approx 45 minutes. It should still jiggle a bit. Cool for a few hours. When ready to serve sprinkle an even layer of granulated sugar & caramelise the sugar with a blowtorch till golden. Leave for a few minutes to crystalise.
