INGREDIENTS
1 kg mutton \ chicken
1 tablespoon ginger garlic
1 tablespoon red chilli paste
2 teaspoon salt
2 teaspoon chilli powder
1 ½ teaspoon dhana jeeru (cumin)
½ teaspoon arad (Turmeric)
3 tablespoon lemon juice
1 cup sourmilk
¾ litre liquidised tomato
Pinch of Ajmo (Tymol seed)
Pinch of Elachi (cardomom) powder
Marinate meat with above ingredients
3 sliced onions
2 pods cracked Elachi (cardomom)
2 cinnamon sticks
2 cloves
2 whole black pepper corns.
½ kg green beans broken into three pieces
2 medium carrots cut into four pieces
4 beetroot boiled and cut into quarters
½ cup frozen peas
3 sweet potatoes.. Cut into thick rounds
3 potatoes cut into halves or quarters
Double beans (optional) boiled
Cabbage cut into wedges and steamed in a little water with salt pepper and butter.
METHOD
Braise onion in ghee (Clarified butter) with Elachi (cardomom) pods.. Cinnamon sticks.. black pepper.. Cloves.. Little whole jeeru (cumin). Until light brown.
Add in marinated meat.. Braise fr 10 minutes.. Then add in carrots and green beans..
Cook until meat is sofentened.. Add in peas and double beans.. Cook for 10 minutes. Add in potato and sweet potatoes..can add two sprigs of curry leaves. Cook until done... Lastly Add boiled beetroot and top with the cabbage.. Simmer until oil comes to the top.. Enjoy.
