250g butter ¾ cup sugar 2 egg yolks (reserve whites) ½ teaspoon vanilla essence 2 tablespoon maziena6 teaspoon baking powder Flour required to make a soft dough ½ cup apricot jam Red & green food col Desicated coconut Egg whites (from the yolks)
Beat butter and sugar until light and creamy. Add the yolks and vanilla, beat again. Add maziena and baking powder mix well. Lastly add enough flour to make a soft dough. sprinkle little flour on the bench, Roll out dough abt ¼ " thick. Use a round cookie cutter to cut out dough. Divide dough in half, use a small nozzle or cap to make hole in the centre of half the dough. Place dough on to a baking tray. Brush top with egg whites & sprinkle coconut over. Bake on 180 deg for 10 minutes.
Divide the jam in 3 bowls Bowl 1, col red Bowl 2, col green Bowl 3, leave plain
When biscuits are cooled, add ½ teaspoon jam in the centre of each biscuit.
