INGREDIENTS
1 chicken
1 tablespoon red ginger garlic masala
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon kashmiri red chillies
1 teaspoon chicken spice
½ teaspoon white pepper
½ teaspoon black pepper
1 tablespoon olive oil
1 tablespoon Steers or Spur peri peri sauce
1 tablespoon mayonnaise
2 tablespoon Calistos sweet mild peri peri sauce
Sauce:
1 tablespoon butter
1 tablespoon Calistos sauce
1 tablespoon Steers or Spur peri sauce
1 tablespoon lemon juice
1 tablespoon mayonnaise or fresh cream
METHOD
Marinate chicken and lay in an oven dish. Cover with foil and bake in a preheated oven on 180 degrees. Remove foil after 30 minutes and turn oven on grill. Let chicken cook through, turning once. For sauce, heat ingredients in a saucepan and pour over chicken. Let it grill for a further 5-10 minutes until done, do not let sauce dry out. Serve with potato wedges and naan or puri.
