Chicken & cheesy Mash Casserole
500gr chicken fillet, finely cubed
2 tablespoon butter
1 teaspoon crushed garlic
2 tablespoon green pepper, chop into small cubes
2 tablespoon red pepper, chop into small cubes
1 teaspoon fresh red chillie paste
1 teaspoon crushed chillies
1 teaspoon crushed cumin
1 teaspoon lemon pepper
1 teaspoon salt
2 large tomatoes, liquidized
1 tablespoon mayonnaise
2 tablespoon lemon juice
2 large potatoes, boiled in jackets
1 egg, beaten
½ cup grated cheese
Freshly ground pepper & salt to taste
½ teaspoon ground green chillies
2 tablespoon lemon juice
½ cup grated cheese
2 eggs whites
1 tablespoon fresh parsley, chopped

Method:
Heat butter, fry garlic and red and green peppers. Add the chicken, spices, tomatoes, mayonnaise and lemon juice. Add ¼ cup water. Mix well and cook on low heat until chicken is cooked. Peel boiled potatoes and grate while still warm. Leave to cool and then add egg, cheese, spices and lemon juice. Adjust salt to taste. Mix well and put half the potato mixture on the base of an ovenproof dish. Cover potatoes with chicken mixture. Sprinkle cheese over chicken. Cover chicken with left over potato mixture. Beat egg whites stiff and spoon over potato mixture. Sprinkle parsley and paprika over egg white. Cover with foil and bake in a preheated oven of 180 degrees until done
