Roasted Butternut/pumpkin Dish

INGREDIENTS

1 medium onion grated
2 garlic cloves crushed
mustard seeds
Jeeru (Cumin) seeds
tumeric
ginger garlic masala salt
ghee (Clarified butter)/oil
roasted pumpkin or butternut

METHOD

Cut butternut into half,pierce all over with a fork or knife. Cook in the microwave for 5 minutes,for each piece,total of ten minutes. Place on the turn table. If you do not want to cook in microwave simply steam on stove till done. Remove peel and chop,. Cool slightly

Heat ghee (Clarified butter)/oil and add grated onion,cook a bit. Then add mustard seeds and Jeeru (Cumin) seeds,cook a bit,then add crushed garlic,stir so that it does not burn. Add in cooked butternut and seasonings,add a tablespoon of water and simmer till all cooked well and seasoned.
