INGREDIENTS
1 butternut cut lengthways and de-seeded
1 packet ready cooked brown basmati & quinoa mix (available at Woolworths)
½ tub low fat cottage cheese
Diced coloured peppers
Diced cherry tomatoes
Salt and pepper
Dried origanum
Lemon juice
Lemon pepper
Cayenne pepper
Flaked toasted almonds
Sliced olives
METHOD
Lay the butternut in a baking pan and drizzle with olive oil, salt, pepper and origanum. Roast in a pre heated oven for about 45 minutes on 180 degrees. Meanwhile prepare the brown rice and quinoa according to packet instructions (says heat for 90 seconds). Mix in the rest of the ingredients, add more spices if you prefer. Spoon mixture into the butternuts and roast for another 10 minutes.
