INGREDIENTS
White bread slicesMargarine2 large potatoesSalt, pepper & butter (to taste)1 tablespoon oil250g chicken fillet (cubed)1 teaspoon ground green chillies1 teaspoon garlic paste½ teaspoon salt½ teaspoon pepper½ teaspoon coriander powder½ teaspoon cumin powder1 teaspoon lemon juice(Optional- diced robot peppers)Grated gouda cheeseDried mixed herbs
METHOD
1. Heat oil in a pan, add spices, garlic, and chilli and braise till fragrant. Add chicken and lemon and cook till done.2. Boil or bake potatoes, mash and season with salt, pepper and butter.3. Cut off crusts of bread. Cut into 2 rounds per slice for minis OR leave as is for normal size.4. Spread margarine one side, then place margarine side down in cupcake pan.5. Spoon in cooked chicken. Top with mash, then grated cheese and herbs.6. Bake in a preheated oven at 180°C, till bread toasts and becomes golden brown. 7. Leave for a minute to cool and remove from pan.
