INGREDIENTS
4 cups fresh cream
6 - 8 yolks
½ cups sugar
2 - 3 Tablespoons vanilla essence
METHOD
beat yolks and sugar until a pale yellow colour
bring to a boil fresh cream and vanilla
in a thin slow stream pour the cream mixture into the egg mixture while beating to prevent eggs from curdling
fill an oven tray with paper towels and ramekins then fill your mixture in d ramekins then pour hot water in the oven tray and loosely cover with foil bake at 200 for 40 minutes
take out the oven allow to cool then set in the fridge for 3 - 4 hrs
remove from fridge leave out for 30 minutes then put a teaspoon sugar evenly on top and use a blow torch to caramalize d sugar
