Kouwo Saaino.. Curry N Rice .famous Memon Dish

INGREDIENTS

1chicken disjointed and washed
1 onion finely sliced
1 spoon whole jeeru (cumin)
3 pieces cinnamon sticks
3cloves
3elachi
3curry leaves
3green chillies slit in middle
1 tablespoon ginger/garlic masala
I tablespoon haldi
1 tablespoon salt

6potatoes washed and cut
4tomatoes liquidised


1 tablespoon fine dhana
1 tablespoon fine jeeru (cumin)
1 tablespoon fine adams red chillies powder

Freshly cut dhania (coriander) to garnish

3 cups washed rice
2 tablespoon oil
Water to boil
3 cinnamon sticks
3cloves
3elachi

Salt to taste



METHOD

Braise,onion in fair sized pot till golden brown with whole jeeru (cumin).cloves.cinnamon sticks.and Elachi (cardomom)..curry leaves
Add chicken lower heat add haldi.salt and ginger /garlic
Allow to cook till you can smell the masalas

Add a,cup if water allow chicken to cook for 10mins

Add potatoes

Allow,to boil

Add tomatoes...
Add masala
Dhana
jeeru (cumin)
Adams red chillie powder
And a,teaspoon salt according to taste

Allow potatoes to cook till done

Then cut dhania (coriander) before serving

Rice

Add oil plus cinnamon stick .cloves and Elachi (cardomom)
Let it get hot
Pour water in
Allow to boil
Add salt to taste

Add washed rice

Allow to boil usually 15mins put on low heat allow to simmer till rice is done ...

Can be served with rotis instead of rice
With katchumer..and papar...
Mutton
Steak
Can be used as well but will take longer to cook ...

Mshl..i now use kashmiri chilli powder ..we dont get adams chiili easily..but saaino..colour is luvly also.njoy
