250g butter1 ½ cups Castor Sugar4 Eggs 2 teaspoon Vanilla Essence2 ¼ cups Cake flour 3 level teaspoon Baking Powder¾ cup Milk ⅓ cup dried cranberries⅓ cup dried strawberries⅓ cup dried goji berries
Preheat oven to 180 deg C.Grease mini cake pans/cupcake pans.Cream butter and sugar till white and fluffy. Add eggs 1 at a time and beat well. Then add vanilla. Mix.Sift flour and baking powder and add to the above alternating with milk. Add berries to the batter and slowly fold in. Fill pans till ¾ full and bake for 15 minutes.Frost cupcakes and decorate with fresh berries or sugar flowers.
