Ingredients 250g butter 1 ½ cups Castor Sugar 4 Eggs 2 teaspoon Vanilla Essence 2 ¼ cups Cake flour 3 level teaspoon Baking Powder ¾ cup Milk ⅓ cup dried cranberries ⅓ cup dried strawberries ⅓ cup dried goji berries
Method: Preheat oven to 180degC. Grease mini cake pans/cupcake pans. Cream butter and sugar till white and fluffy. Add eggs 1 at a time and beat well. Then add vanilla. Mix. Sift flour and baking powder and add to the above alternating with milk. Add berries to the batter and slowly fold in. Fill pans till ¾ full and bake for 15mins. Frost cupcakes and decorate with fresh berries or sugar flowers.
