150g box Woolworths caramelized onion squares
1⁄2 tub Lancewood creme fraiche
1 tablespoon Crosse & Blackwell Trim (light mayonnaise)
1⁄2 teaspoon freshly ground black pepper
1⁄2 teaspoon garlic salt
1 teaspoon rough red chillies
Dash lemon juice
1 teaspoon Robertson's veggie spice
1⁄2 tray baby zucchini
1⁄2 punnet baby plum tomatoes
Mix creme fraiche with all spices and trim.
Spoon onto squares.
Then using a vegetable peeler, peel lengthwise slices of zucchini.
Place in microwave bowl with 1⁄4 cup water and cook for a minute.
Slice tomatoes in quarters.
Roll zucchini slices in rosettes and arrange with tomatoes on squares.
Place in fridge to chill and serve.
