150g box Woolworths caramelized onion squares
½ tub Lancewood creme fraiche
1 tablespoon Crosse & Blackwell Trim (light mayonnaise)
½ teaspoon freshly ground black pepper
½ teaspoon garlic salt
1 teaspoon rough red chillies
Dash lemon juice
1 teaspoon Robertson's veggie spice
½ tray baby zucchini
½ punnet baby plum tomatoes
Mix creme fraiche with all spices and trim.
Spoon onto squares.
Then using a vegetable peeler, peel lengthwise slices of zucchini.
Place in microwave bowl with ¼ cup water and cook for a minute.
Slice tomatoes in quarters.
Roll zucchini slices in rosettes and arrange with tomatoes on squares.
Place in fridge to chill and serve.
Refreshing and tasty appetizer!!!
