INGREDIENTS
                      Cake:
2 cups cake flour
 ½ cup & 2 tblspns cocoa powder
 2 tspns baking powder
 1 teaspoon bicarbonate of soda
 2 eggs
 1¼ cup castor sugar
 1 cup mayonnaise
 1 cup cold water (not ice)
 1 teaspoon vanilla essence
Icing:
 2 cups icing sugar
 3 tblspns cocoa powder
 ½ teaspoon vanilla essence
 1 teaspoon butter
 2 tblspns boiling water
                    
METHOD
                      Method: Cake
Sift flour, cocoa, baking powder & bicarb together. Beat eggs & castor sugar until light & creamy & fold into dry ingredients. Combine mayonnaise, water & vanilla essence. Mix well & add to mixture. Pour batter into a lightly greased ring mould & add lunch paper on the base. Microwave for 10 minutes. Remove & allow to stand for 10 minutes, then turn onto a cooling rack.
Method: Icing
Sift icing sugar & cocoa into a bowl. Add vanilla & butter. Add water to make a smooth icing. 
Decorate & enjoy.
NB: I doubled the icing as I split the cake in half, added icing in the centre & on top of the cake.
